The traditional sushi filling is raw ocean fish, which is abundant in Japan. Most often, tuna, salmon or eel are used in this capacity, as well as some other types of fish. In addition, in order to expand the assortment, many establishments include in their assortment sushi with other types of fillings - seafood, for example, squid, shrimp and others, vegetables and even chicken.
Ready-made sushi is served to the guest with three main spices - wasabi, soy sauce and ginger. Wasabi and soy sauce are usually mixed with each other, thus obtaining a seasoning that can add spice and saltiness to the taste of the guest, and ginger is consumed between eating different types of sushi in order to fully feel the taste of the new dish.

Sushi in Russia is usually called a cook who specializes in the preparation of sushi. Another variant of the designation of this specialist is the name "sushi chef". Obtaining this profession involves the passage of special training, where the student gets acquainted with the products used in the preparation of sushi, the main methods of their preparation and the secrets of the masters of their craft.
The level of training obtained in the course of such training may vary. So, the basics of the profession can be learned in short-term courses, which are currently held in almost all major cities of Russia. However, in order to work as a sushi man in a good restaurant in Russia or abroad, you will need to undergo training at a culinary college in the homeland of sushi - in Japan. It can take up to 10 years and can be quite expensive. Only graduates of such institutions are considered qualified specialists in their field, who are recognized even by Japanese masters.
